Gary began his career in the hotel industry in the mid-1980s, before joining Allied Domecq as a trainee pub manager, moving through its ranks into Area Management. He progressed to Head of Concept Development for Eldridge Pope before joining Merlin Entertainments in 2003 holding a number of senior positions before becoming Global Food and Beverage Director in 2009. Gary left Merlin in 2014 to lead the merger of Peppercorn and Swan.
During his career, Gary has formed and led teams to achieve outstanding financial and customer satisfaction results through implementing strategies, structures, and processes that grow sales and profit.
